Costco Dinners Pt. 2

Ok! You asked for it! Here is Part  2 of my quick and easy Costco dinners. These dinners are meant to be super fast, but yet, so good! These would be great to have on hand for when life just happens and you need something quick to feed your family! Here are 5 Costco Dinner Ideas that will come in very handy! 

Meal #1- Mediterranean Chopped Salad Kit w/ Rotisserie Chicken

Costco pre-made chopped salad kits are the best! They even come with a yummy dressing for you! All you need to do to make this salad a meal is to add some protein. I like to get the pre-pulled rotisserie chicken and add to our salad. 

 

Meal #2- Kevin's Mongolian Beef w/ Stir Fry Veggies

We love the Kevin's brand of pre-made meals in my family. They taste really good, they are super fast, and they have clean ingredients! I have tried the Mongolian style beef and the lemongrass chicken and both are so good! I like to serve this over a bed of stir-fry veggies and it makes a really easy, fast, delicious meal for your family.

 

Meal #3- Pork Carnitas w/ Green Chile Sauce

Do you know what pork carnitas is? It is a super yummy pork that has a Mexican style seasoning. It is crispy on the outside but nice and tender on the inside. It is so good and a nice change from just plain taco meat. I like to buy the green Chile sauce that Costco sells and serve all of it over a bed of rice or veggies. 

 

Meal #4- Tortilla Crusted Tilapia w/ Mashed Potatoes

One of our family's favorites from Costco is the Tortilla Crusted Tilapia! It is so good and cooks in the oven for just about 15 minutes and it is done. While that is cooking you could throw some veggies in the oven to roast at the same time. I like to buy the pre-made mashed potatoes that you can just pop in the microwave to cook and finish up your meal! 

Meal #5- Aidell's Chicken Meatballs

These are a great easy meal option that adds a variety to most convenience meals. You can heat these meatballs up on the stove or in the microwave and in just minutes donner can be done. I like to serve these with rice or veggies with teriyaki sauce over them.
